yummy & easy Rice Pudding Cake


Ingredients:
1/4 cup (4 tbsp.) unsalted butter
1/2 cup breadcrumbs
1 1/2 cups rice
4 cups milk
1 cup sugar
Grated zest of 1 lemon
1/2 cup raisins, softened in warm water, dried, and lightly floured
2 large eggs, beaten
Salt
The cake can be eaten warm or cold. This recipe is typical of Aosta.

Directions:
1. Preheat the oven to 375ºF. Butter a cake pan and sprinkle with breadcrumbs. Cook the rice in milk and a pinch of salt, stirring to keep it from sticking to the bottom of the pan.
2. When the rice is done add 3 tablespoons of butter, the sugar, lemon zest, raisins, a pinch of salt, and the eggs. Mix with care.
3. Pour the rice mixture into the pan. Dust with the remaining breadcrumbs and dot with butter.
4. Bake for 20 minutes or until golden.
